Chocolate Cake

Special Chocolate Cake Recipe is a rich, glossy icing makes this cake special. Good texture. Moist and chocolatly

Ingredients:
Unsweetened chocolate baking squares (1 oz., 28 g, each), cut up   3 3
Boiling water  1 cup 250 ml
Hard margarine, softened 1/2 cup 125 mL
Granulated sugar 1 1/2 cups 375 ml
Large eggs  3 .3
Vanilla 1 tsp. 5 ml
All-purpose flour 2 1/4 cups 560 ml
Baking soda 1 1/2 tsp. 7 mL
Salt 1/2 tsp. 2 ml
Sour cream 1 cup 250 mL
Sour Cream Icing,
Fudge Icing,

Method:
Place chocolate in medium bowl. Add boiling water.

Stir until chocolate is melted. Cool to room temperature. Cream margarine and sugar in large bowl. Beat in eggs, 1 at a time. Add vanilla. Mix,

Stir flour, baking soda and salt in separate medium bowl. Mix in flour mixture in 3 parts, alternately with sour cream in 2 parts. Add chocolate mixture. Stir.

Turn into 2 greased 8 inch (20 cm) round layer cake pans. Bake in 350°F (1 75°C) oven for about 35 to 40 minutes. A wooden pick inserted in center should come out clean. Cool.

Spread Sour Cream Icing over top and sides. Pipe with Fudge Icing and remaining Sour Cream Icing. Cuts into 12 wedges.
