Herbed Pork Tenderloin

Herbed Pork Tenderloin Recipe is a great recipe. I change it only slightly by adding a couple dollups of Grey Poupon dijon mustard to the herb and oil mixture. It makes it a little hard to blend smoothly, but adds a whole lot of flavor.

Serve: 6, Prep: 20 minutes

Ingredients:
1 teaspoonSalt
1 2-poundpork tenderloin roast
1/2 teaspoonBlack Pepper; ground
1/3 cupExtra Virgin Olive Oil
2 1/2 poundspotatoes; thinly sliced
4 clovesGarlic; crushed
4 teaspoonsDried Rosemary
4 teaspoonsdried thyme; crushed

Method:
Preheat oven to 375F.

In a small mixing bowl combine olive oil, garlic, rosemary, thyme, salt and pepper. Coat pork tenderloin with 3 tablespoons of the garlic mixture and place in a roasting pan.

Toss potatoes with remaining garlic mixture and arrange around roast in the pan.

Roast for 35 to 40 minutes, stirring potatoes once. Broil roast (and potatoes if desired) for 5 minutes to brown.

Let stand for 5 minutes before slicing
