Coriander Beef Recipe Loved the dish. We used Minute steak to make sure it was think so would cook quickly. elegant type of recipe.
Ingredients:
500g (1lb) rump steak, cut into thin strips
4 cloves garlic, finely chopped
1 tablespoon finely chopped fresh ginger
1/2 cup (25g/ 3/4 oz.) chopped coriander roots, stems and leaves
1/4 cup (60ml/2 f oz.) oil
oil, extra, for cooking
2 red onions, thinly sliced
1/2 red capscicum, thinly sliced
1/2 green capscicum, thinly sliced
1 tablespoon lime juice
1/2 cup (25g/ 3/4 oz.) chopped coriander leaves, extra
Method:
Place the beef strips in a glass or ceramic bowl. Add the garlic, ginger, coriander and oil. Mix together well, then cover and refregirate for 1-2 hours.
Heat the owk until very hot and stir-fry the meat in thee batches over high heat for 2-3 minutes, or until the meat is just cooked. Remove all the meat from the wok and keep it warm.
Heat 1 tablespoon oil, add the onion and cook over medium high heat for 3-4 minutes, or until the onion is slightly softened.
Add the capsicum, and cook, tossing constantly, for 3-4 minutes, or until the capsicum is slightly softened.
Return all the meat to the wok with the lime juice and extra coriancer.
Toss well, then remove from the heat and season well with salt and cracked balack pepper. Serve immediately.
