Chocolate Hazelnut Cake Recipe is an Hazelnut flavor complemented by a mocha filling. An awesome cake. it symbolize the wedding cake of Catherine Middleton Very luxurious type of dessert.
For Cake:
6 (6) Large eggs
1 1/2 (375 mL) cups Hazelnuts (filberts)
1 cup (250 mL) Granulated sugar
1/2 cup (125 ml) Semisweet chocolate chips
4 tsp. (20 mL) Baking powder
1 tsp (5 mL) Vanilla
1/4 tsp (1 mL) Salt
For Filling:
2 tbsp. (30 ml) Hard margarine, softened
1 cup (250 mL) Icing (confectioner’s) sugar
1 tsp. (5 ml) Cocoa, sifted
1/2tsp. (2mL) Vanilla
2 tbsp. (30 mL) Strong coffee
Method:
Mocha Fluff Icing:
Cake: Place all 7 ingredients ¡n blender. Process for 3 minutes. Pour into 2 greased and waxed paper-lined 8 inch (20 cm) round cake layer pans.
Bake in 350cF (175°C) oven for about 25 minutes until wooden pick inserted in center comes out clean. Cool.
Filling: Beat margarine, icing sugar, cocoa, vanilla and coffee together well ¡n small bowl. Remove 1 cake layer, top side up, to plate.
Spread with filling. Set second cake layer over filling, top side up. Ice cake. Cuts into 12 rich wedges.
