FOR MEATBALLS:
1 medium (1/2 cup) onion, finely chopped
1 pound lean ground beef
1/4 cup plain breadcrumbs
1 egg
1/2 teaspoon seasoning salt
WAIKIKI SAUCE:
2 tablespoons LAND O LAKES Butter
1 small (3/4 cup) red bell pepper, chopped
1 (10-ounce) jar (about 1 cup) sweet and sour sauce
1 (8-ounce) can pineapple tidbits, undrained
2 tablespoons sweetened flaked coconut
Hot cooked rice or noodles Sweetened flaked coconut, if desired
Method:
1. Heat oven to 400° F. Combine all meatball ingredients in medium bowl; mix well.
2. Shape meatball mixture into 24 (1 1/4-inch) balls. Place into ungreased 13x9-inch baking dish. Bake for 15 to 20 minutes until internal temperatures reaches at least 165°F. and centers of meatballs are no longer pink. Drain off fat.
3. Melt butter in 2-quart saucepan until sizzling; add bell pepper. Cook over medium-high heat until pepper is softened (2 to 3 minutes).
4. Stir in sweet and sour sauce, pineapple tidbits with juice, coconut and cooked meatballs. Reduce heat to medium-low; cook, stirring occasionally, until meatballs are heated through.
5. Serve over rice or noodles. Garnish with coconut, if desired.
Notes and Tips:
• Meatballs can be frozen for up to 3 months in a resealable plastic freezer bag or container.
Variations:
• SWEDISH SAUCE: Prepare meatballs as directed. Omit Waikiki Sauce. Combine 1 (10 3/4-ounce) can condensed cream of chicken soup, 1/2 cup sour cream, 1/2 cup milk and 1/2 teaspoon ground allspice in 2-quart saucepan. Cook over medium heat, stirring occasionally, until smooth (3 to 4 minutes). Reduce heat to medium-low; add cooked meatballs. Cook, stirring occasionally, until meatballs are heated through.
• THAI CURRY SAUCE: Prepare meatballs as directed. Omit Waikiki Sauce. Combine 1 cup light coconut milk, 2 tablespoons peanut butter, 2 tablespoons light soy sauce, 1 1/2 teaspoons curry powder and 14 to 1/2 teaspoon chili garlic sauce in 2-quart saucepan. Cook over medium heat, stirring occasionally, until smooth (3 to 4 minutes). Reduce heat to medium-low; add cooked meatballs. Cook, stirring occasionally, until meatballs are heated through.
MEATBALL TIPS:
Here are two extra-easy ways to make meatballs that will shorten prep time:
• Use a small ice cream scoop to scoop meat mixture and quickly form evenly-sized meatballs.
• Pat the meat mixture into an 8x3-inch rectangle in the 13x9-inch pan you’ll be baking the meatballs in. Cut into 1-inch squares and separate slightly, about 1/2-inch apart. Bake 20 to 25 minutes.
