Chocolate Amaretto Cheesecake Recipe garnish with amaretto flavored whipped topping and chocolate dipped whole almonds for a lavish presentation.
For Crust:
1/4 cup 60 ml Hard margarine
3 tbsp. 50 ml Granulated sugar
1 1/4 Cups 300 ml Graham cracker crumbs
3 tbsp 50 ml Cocoa, sifted 5OmL
For Filling:
6 6 Semisweet chocolate baking squares (1 oz, 28 g, each), cut up
2 2 Cream cheese (8 oz., 250 g, each), softened
1/2 cup 125 ml Granulated sugar
2 2Large eggs
2/3 75 ml Sour cream
1/3 cup 75 ml Amaretto liqueur
1 tsp 5 ml Vanilla
1/2 tsp 2 ml Almond flavoring
For Crust:
Melt margarine in saucepan. Stir in sugar, graham crumbs and cocoa. Press in bottom and 1 inch (2.5 cm) up side of ungreased 9 inch (22 cm) springform pan. Chill.
For Filling:
Melt chocolate in small saucepan over hot wate or on low, stirring constantly until smooth. Do not overheat.
Beat cream cheese and sugar well in medium bowl. Beat in eggs, 1 at a time, just until blended. Stir in remaining 4 ingredients. Stir In melted chocolate. Pour filling over crust.
Bake in 300F (150°C) oven for 1 hour Turn oven off. Do not open oven door. Leave cheesecake in oven for 1 more hour. Cool. Chill overnight. Cuts into 12 wedges
