Oatmeal Pancake Mix

Oatmeal Pancake Mix Recipe are so wonderful, easy, and healthful and is great to have on hand for weekend guests and to give as gifts along with a card printed with the recipe. From Theresa Slemp, Afton, Tennessee

Ingredients:
mix
4 cups old-fashioned oats
2 cups all- purpose fl our
2 cups whole wheat fl our
1 cup packed brown sugar
1 cup instant nonfat dry milk
3 tablespoons baking powder
2 tablespoons ground cinnamon
5 teaspoons salt
1⁄2 teaspoon cream of tartar

pancakes
2 eggs
1⁄3 cup canola oil

1. To prepare the mix, combine all of the ingredients in a large bowl; blend well. Store in a sealed gallon- sized plastic storage bag or airtight container.

2. To prepare the pancakes, beat the eggs in a large bowl. Gradually beat in the canola oil. Alternately add 2 cups pancake mix and 1 cup water to the mixture. Blend well.

3. Preheat and oil a griddle. Using a 1⁄3- cup mea sure, pour the batter onto the griddle. Cook until bubbles form around the edges; turn and continue to cook until done. Repeat with the remaining batter.
