Ingredients:
6 English muffins, split
4 cups shredded Cheddar
1 cup mayonnaise
2 green onions, minced (white and green parts)
One 15- ounce can pitted ripe olives, drained
Method:
1. Preheat the broiler. Arrange the muffin halves, cut side up, in a single layer on a large baking sheet.
2. Combine the Cheddar, mayonnaise, and green onions in a medium bowl; mix well.
3. Spread equal amounts of the mixture on each muffi n half.
4. Broil 4 inches from the heat source for 2 minutes, or until bubbly. Remove from the oven.
5. Cut the olives into shapes for the eyes, nose, and mouth, and arrange on each muffi n half.
Notes and Tips:
may be assembled as directed, but simply place a few halved olives on top instead of making faces, if desired. Use for a fun snack, breakfast, or lunch as well.
