Fresh Apple Muffins

Fresh Apple Muffins Recipe are delicious for breakfast or for afternoon tea. Fresh apples in the fall make the best. From Mrs. Ivor Stephenson, Winnsboro, South Carolina

Ingredients:
1 cup vegetable oil
2 cups sugar
3 cups all- purpose flour
3 eggs
1 cup chopped nuts
2 teaspoons vanilla extract
1 teaspoon salt
1 teaspoon baking soda
2 cups chopped unpeeled apples
Cream cheese, soft ened

Method:
1. Preheat the oven to 350°F. Lightly grease muffi n cups.

2. Combine the oil, sugar, flour, and eggs in a large bowl; mix well. Stir in the nuts, vanilla, salt, and baking soda.

3. Gently fold in the apples. Fill muffin cups two- thirds full.

4. Bake for 20 to 25 minutes. Serve warm with cream cheese.
