Ingredients:
Serves 4
1 kilo mussels, brushed and soaked in water
1 tablespoon cooking oil
1 stalk leek, cut into 1 -inch lengths
2 — 3 slices ginger
2 heads garlic, sliced in slivers
2 tablespoons rice wine
2 tablespoons oyster sauce
2 teaspoons black bean and garlic sauce
1 teaspoon seafood chili sauce or any chili sauce
Method:
Clean mussels very well. Heat wok on high. Add oI then sauté leeks, ginger and garlic.
Cook 1 to 2 minutes or until fragrant. Add mussels and remaining ingredients. Mix well.
Cover for about 4 to 5 minutes or until all shells open (discard unopened shells.) Serve at once with rice.
