Nutty fudge is a chocolate and roses are associated with romance, but they make a heavenly pair themselves.
Ingredients
FUDGE
2 cups nondairy chocolate chips
½ cup vanilla or hazelnut soy
creamer
¼ cup unsalted creamy or
crunchy nut butter of choice
(such as peanut butter, almond
butter, or cashew butter)
¼ cup vegan butter substitute
TOPPING (optional)
2 to 4 tablespoons shredded
dried coconut (sweetened or
unsweetened), toasted nuts, and/or diced fruit
Method
Oil an 8-inch square pan.
Combine the chocolate chips, soy creamer, nut butter, and vegan butter substitute in a medium saucepan and warm on low to medium heat until melted.
Stir with a wooden spoon until smooth. Pour evenly into the prepared pan.
Sprinkle the optional topping of your choice over the fudge and press it in gently so the pieces are lightly embedded.
Cool, cover, and refrigerate for 4 to 8 hours. Cut into 9 bars just before serving. Store leftover fudge in a sealed container in the refrigerator.
