Zesty orange layer cake with orange buttercream or chocolate orange frosting is nice recipe for christmas and Valentines

Ingredients
ORANGE CAKE
2 cups all-purpose flour
2 tablespoons finely chopped
candied orange peel
1 tablespoon finely gratedorange peel
2 teaspoons baking powder
½ teaspoon baking soda
1¼ cups powdered sugar
½ cup vegan butter substitute,
at room temperature
⅔ cup soymilk⅓ cup orange juice
2 teaspoons white vinegar
1 teaspoon orange extract
1 teaspoon vanilla extract

Method
To make the cake, preheat the oven to 350 degrees F and oil two 8-inch round cake pans.

Combine the flour, candied orange peel, grated orange peel, baking powder, and baking soda in a bowl. In a separate large bowl, combine the sugar and vegan butter substitute and beat with a wooden spoon until smooth.

Beat in the soymilk, orange juice, vinegar, and extracts. Add the flour mixture and stir until just combined. Pour the batter evenly into the preparedpans.

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool on racks.

Ingredients:
ORANGE BUTTERCREAM FROSTING
1 cup powdered sugar½ cup vegan butter substitute,
at room temperature
½ cup soy cream cheese
1 tablespoon finely gratedorange peel
1 teaspoon vanilla extract
1 teaspoon orange extract

CHOCOLATE ORANGE FROSTING
1 cup nondairy chocolate chips
3 tablespoons vegan buttersubstitute
2 teaspoons orange extract
GARNISH
Orange wedges or candied
orange peel

Method
To make the Orange Buttercream Frosting, combine all the ingredients in a bowl and beat with an electric mixer until smooth. Alternatively combine all
the ingredients in a food processor and process until fluffy. Refrigerate until ready to use.

To make the Chocolate-Orange Frosting, melt the chocolate chips and vegan butter substitute in a double boiler over gently simmering water.Alternatively, place them in a microwave-safe bowl and microwave at medium power for 1 minute. Stir. Microwave for 25 seconds longer and stir until
smooth. If necessary, microwave for an additional 25 seconds. Stir in the orange extract and keep stirring until the mixture is smooth.

To assemble, remove the cooled cakes from the pans. If you want additional layers, slice each cake in half horizontally with a long knife to make 4
layers. Spread the frosting of your choice over the top of each layer. Arrange the layers on top of each other and frost the sides of the cake with the
frosting of your choice. Garnish with orange slices and/or candied orange peel. Cover loosely and store in the refrigerator.


Tips
Each frosting recipe makes enough to frost the sides of the coke or the tops of two layers. Double the recipe if you are using four layers, or
make both frostings and use one between the layers and the other to frost the sides of the cake.
