Sesame cookies

Sesame cookies If you enjoy a wholesome, cakelike cookie that tastes delicious, you will surely enjoy these. Nutritious nut butter brings out the flavor in these goodies. 

Ingredients
YIELD: ABOUT 30 COOKIES
⅔ cup raw sesame seeds
2 cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
⅔ cup granulated sugar
½ cup vegan butter substitute,
slightly softened but not at
room temperature
¼ cup tahini
⅓ cup plus 1 tablespoon
soymilk
1 teaspoon almond extract
1 teaspoon vanilla extract

Method
Preheat the oven to 350 degrees F. Spread the sesame seeds in a thin layer on a dry baking sheet (an insulated baking sheet or a regular baking sheet lined with parchment paper or a silicone pad) and place in the oven for about 5 minutes.

Do not let them brown. Immediately transfer the seeds to a bowl.

Oil 3 baking sheets. Combine the flour, baking powder, and salt in a bowl. In a separate large bowl, combine the sugar, vegan butter substitute, and tahini and beat with a wooden spoon until creamy. Beat in the soymilk, extracts, and half of the sesame seeds. Add the flour mixture and stir until

combined. Shape the dough into small logs, about 1½ inches long and ¾ inch in diameter. Form the logs into rings, if desired.

Roll the logs in the remaining sesame seeds and arrange them on the prepared baking sheets about 2 inches apart. Bake for 16 to 18 minutes, or until the cookies begin to turn light brown. Cool on racks. Store in a sealed container.
