Pumpkin bread is definitely a deliciously spicy, pumpkin-rich quick bread. I keep my freezer stocked with it. from "Joyce Jackson, Bridgetown, Nova Scotia"
Ingredients
1-1/2 cups sugar
1 cup canned pumpkin
1/2 cup each vegetable oil and water
2 eggs
1-2/3 cups all-purpose flour
1 teaspoon each baking soda and ground
cinnamon
3/4 teaspoon salt
1/2 teaspoon each baking powder and ground
nutmeg
1/4 teaspoon ground cloves
1/2 cup each chopped walnuts and raisins
Method
1 In a large mixing bowl, combine sugar, pumpkin, oil, water and eggs; beat well. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in nuts and raisins.
2 Pour into a greased 9-in. x 5-in. x 3-in. loaf pan.
3 Bake at 350° for 65-70 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack. Yield: 1 loaf.
