Ingredients 

1 recipe cookie dough

1 pint nondairy ice cream

Method 

Prepare the cookie dough and preheat the oven according to the recipe directions. Oil 4 baking sheets.

Form the dough into 2-inch balls and arrange them on the prepared baking sheets about 4 inches apart. Press down gently on the balls to flatten them slightly.

If the recipe is for rolled cookies, make sure the dough is well chilled. Then roll out the chilled dough and cut it into circles, 3 inches in diameter. The cookies should be slightly thinner than you would normally make them.

Bake according to the recipe directions but add 1 extra minute to the baking time; the cookies should be very lightly browned. Take care not to overbake them, as they should retain some chewiness. Cool on racks.

When cool, freeze the cookies in a single layer, or layer them between parchment paper, for 30 to 60 minutes.

To make the cookie sandwiches, place 1 heaping tablespoon of ice cream between the flat side of 2 cookies. Store in sealed plastic containers in the freezer and keep frozen until serving time.
