The Homemade Apple Pie Recipe Perhaps the ultimate in home-baked comfort food, this fall pie is best served warm with vanilla ice cream.
9in (23cm) pie dish
2½ cups all-purpose flour, plus extra
1⁄2 tsp salt
¾ cup vegetable shortening,
plus extra for greasing
2 tbsp sugar, plus extra for glazing
1 tbsp milk, to glaze
For the filling:
2 1⁄4lb (1kg) tart apples
juice of 1 lemon
½ cup sugar, or to taste
2 tbsp all-purpose flour
½ tsp cinnamon, or to taste
¼ tsp nutmeg, or to taste
1 Sift the flour and salt into a bowl. Add the shortening, cutting it in with 2 butter knives.
2 With your fingertips, rub the fat into the flour until crumbs form. Lift the mixture to aerate it.
3 Add the sugar. Sprinkle in 6–7 tablespoons cold water, mixing lightly with a fork.
4 Press the crumbs into a ball, wrap, and chill for 30 minutes. Meanwhile, grease the dish.
5 Flour a surface. Roll out 2⁄3 of the dough into a round 2in (5cm) larger than the dish.
6 Using the rolling pin, drape the pastry over the dish, then gently push it in to the contours.
7 Trim any excess pastry, then chill for 15 minutes, until firm.
8 Peel the apples, then cut off the ends. Halve the apples and scoop out the cores.
9 Set each apple, cut-side down, on a cutting board and cut into medium slices.
10 Put the apple slices in a bowl and sprinkle with the lemon juice. Toss to coat.
11 Sprinkle the flour, cinnamon, nutmeg, and sugar over the apples. Toss to coat.
12 Put the apples in the pie dish and arrange so that it is slightly mounded in the center.
13 Brush the edge of the shell with water. Roll out the remaining dough into an 11in (28cm) round.
14 Wrap it around the rolling pin and drape it over the filling. Trim the top crust.
15 Press the edges together to seal, crimping with the back of a knife as you go.
16 Cut an “x” in the top crust. Gently pull back the point of each triangle to reveal the filling.
17 Roll out the trimmings, cut into strips, and moisten. Lay on the pie in a criss-cross pattern.
18 Using a pastry brush, glaze the pie with the milk so that it bakes to a golden color.
19 Sprinkle with sugar. Chill until firm, about 30 minutes. Preheat the oven to 425°F (220°C).
20 Bake for 20 minutes. Reduce to 350°F (180°C) and bake for 30–35 minutes longer.
21 Insert a skewer through the steam vent to see if the apples are tender. Serve warm.
