The Chocolate passion fruit ganache macarons Recipe

Ingredients:
7 ounces (200 grams) dark chocolate (65% to 70% cocoa content), cut in little pieces, OR dark chocolate chips
½ cup (3.5 ounces/100 grams) fr ozen
passion fruit puree or juice
2 tablespoons (1 ounce/28 grams) chilled unsalted butter, preferably European-style

Method:
Melt the chocolate in the microwave oven, or in the top of a double boiler over simmering water on the stovetop.

Heat the passion fruit puree or juice in the microwave or on the stovetop. If using a stovetop, remove the pans from the heat, then slowly add the passion fruit to the
chocolate and mix well.

Add the butter, stirring until the ingredients are perfectly blended.

Pour into a bowl and let cool for 30 minutes at room temperature, until thick enough to spread or pipe.
