I didn't have the ingredients on hand to make latik, so I spread sweetened shredded coconut on top and browned it under the broiler for a few minutes. Ingredients:
1 cup rice flour
1 cup white sugar
1 2/3 cups coconut milk
1 (14.5 ounce) can cream-style corn

Method:
Mix thoroughly the coconut milk, cream-style corn, rice flour, and sugar in a non-stick pot over medium heat.
Stir frequently while cooking until thick, about 30 minutes. Pour into a serving platter with ridges, or a tray, and let cool completely before serving.
