The orange pork tenderloin with butternut squash recipe prep time: 20 minutes start to finish: 7 hours 20 minutes 6 servings
Ingredients:
1 butternut squash (3 lb), peeled, cut into 2-inch pieces (6 cups)
1⁄2 teaspoon salt
2 pork tenderloins (3⁄4 to 1 lb each)
1⁄4 cup orange marmalade
2 cloves garlic, finely chopped
Method:
1 Spray 3- to 4-quart slow cooker with cooking spray. Arrange squash around edge of cooker.
2 Sprinkle with salt. Top with pork (it will overlap squash slightly). In small bowl, mix marmalade and garlic; spread evenly over pork.
3 Cover; cook on Low heat setting 7 to 8 hours or until pork has slight blush of pink in center and thermometer inserted in center reads 160°F.
4 Remove pork from cooker; place on cutting board. Cut pork into slices; serve with squash.
Notes and Tips:
Watching your salt intake? Omit the salt, and season with 1⁄4 teaspoon pepper. This is a great healthy recipe for entertaining. Fan pork slices in a circular pattern on a platter, and spoon squash in the center. Drizzle remaining juices over pork, and garnish with slices of fresh orange and sprigs of parsley.
