The cajun pork tenderloin with vegetables recipe prep time: 15 minutes start to finish: 1 hour 4 servings
Ingredients:
2 teaspoons Cajun or Creole seasoning
1 pork tenderloin (1 lb)
2 medium baking or Yukon gold potatoes, peeled
4 small zucchini (1 lb)
1 1⁄2 cups frozen small whole onions
2 tablespoons butter or margarine, melted
1⁄2 teaspoon dried thyme leaves
1⁄4 teaspoon salt
Method:
1 Heat oven to 425°F. Rub Cajun seasoning onto all sides of pork; place in ungreased 15×10×1-inch pan. Insert ovenproof meat thermometer horizontally into center of thickest part of pork.
2 Cut potatoes and zucchini lengthwise in half. Arrange potatoes, zucchini and onions around pork. Drizzle butter over vegetables; sprinkle with thyme and salt.
3 Bake uncovered about 35 minutes or until thermometer reads 150°F. Loosely cover pan with foil; let stand about 10 minutes or until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F. Cut pork into thin slices. Serve with vegetables.
