The brown sugar glazed pork with sweet potatoes recipe prep time: 10 minutes start to finish: 8 hours 10 minutes 6 servings
Ingredients:
1 1⁄2 lb sweet potatoes, peeled, cut into 1⁄2-inch slices
1 boneless pork shoulder roast (in netting or tied; 21⁄2 lb)
2 tablespoons packed brown sugar
1⁄4 teaspoon ground red pepper (cayenne)
1⁄4 teaspoon salt
1⁄8 teaspoon pepper
1 clove garlic, finely chopped
Method:
1 In 3- to 4-quart slow cooker, place sweet potatoes; place pork on potatoes. In small bowl, mix remaining ingredients; sprinkle over pork.
2 Cover; cook on Low heat setting 8 to 10 hours.
3 Remove pork from cooker; place on cutting board. Remove netting or strings from pork. Slice pork, or pull pork into serving pieces using 2 forks.
4 Serve with sweet potatoes, spooning juices over pork.
