Noodles with Chicken and Fresh Black Beans Recipe is an absolutely delicious and so easy. it will definitely be made on a regular basis in my household
2 teaspoons salted black beans oil, for cooking
2 teaspoons sesame oil
500g (1lb) chicken thigh fillets, cut into strips
3 cloves garlic, sliced
4 spring onions, chopped 1 teaspoon sugar
1 red capsicum, sliced
100g (3 1/2 oz.) green beans, cut into short pieces
300g (10 oz.) Hokkien noodles
2 tablespoons oyster sauce
1 tablespoon soy sauce
Rinse all the black beans in a running water and drain them and roughly chop
Heat the wok until it becomes hot, add 1 tablespoon of the oil and the sesame oil and swirl it all around to coat the side.
Stir-fry all the chicken in three small batches, until it becomes browned, in the mean time tossing regularly and remove from the wok and set aside.
Reheat the wok, add 1 tablespoon of oil and stir-fry the garlic and the spring onion for about 1 minute. Add the black beans, the sugar, the capsicum and the beans, and cook for about 1 minute or so.
Sprinkle with 2 tablespoons of water, cover it and steam for about 2 minutes.
Gently separate the noodles and add to the wok with the chicken, the oyster sauce and the soy sauce, and toss it well.
Cook, covered, for about 2 minutes or so, or until the noodles become just softened.
