White Roasted in White Wine

Ingredients:
2 young whole chickens
1/2 cup olive oil
5 small onions, peeled and quartered
5 oz smoked ham, diced
1 1/3 lb small potatoes, peeled
1/2 cup dry white wine
Kosher salt
Freshly ground pepper

Method:
Preheat oven to 350 F.

Rinse Chicken and pat dry Rub interior and exterior with salt and pepper, brush generously with oil, and brown on all sides in a large Dutch oven. Remove and keep warm

In the pan residues, brown onions, remove, and set aside. Add ham and braise for 5 minutes. Add chicken, onions, potatoes and wine, and bake in the oven for about 20 miunutes or until done.

Serve with potatoes on the side.
