Serve: 4 to 6

Ingredients:
2 kilos firm red tomatoes
1/4 cup extra-virgin olive oil
2 tablespoons minced garlic
1 medium size white onion, finely chopped
1 tablespoon salt
1 teaspoon Italian seasoning
2 tablespoons extra virgin olive oil
1 425-gram can sliced button mushroom, drained
2 cups heavy cream
1/4 cup white wine
500 grams linguine, cooked according to package directions
Parmesan cheese

Method:
In a large pot, blanch tomatoes in boiling water for 30 seconds.

Remove from water and immediately plunge in a basin of ice water to stop the cooking. Peel tomatoes, remove seeds and slice into quarters.

In a wide pan over medium flame, heat 1/4 cup olive oil. Add garlic and onions and cook-stir for 1 minute. Add sliced tomatoes.

Stir in salt and Italian seasoning. Turn heat down to lowest setting.

Cover pan and let tomatoes stew gently for 1 hour, stirring occasionally, being careful not to mash the tomatoes.
