Irish Cream Cheesecake

Irish Cream Cheesecake Recipe For 8 milder liqueur flavor, use less lrish cream and add whipping cream or milk to make up the difference. From cocoa teamed with coconut wo white chocolate paired with berries to semisweet pieces mixed with mint, the chocolate combinations will delight your taste buds.

Ingredients:
1 1/2 cups chocolate cookie crumbs
6 Tbsp. butter, melted
1/2 tsp. ground cinnamon
3 8-oz. plcg. cream cheese, softened
1 8-oz. carton dairy sour cream
8 oz. semisweet chocolate, melted and cooled
1 cup sugar
3 eggs, slightly beaten
1/2 cup Irish cream liqueur
2 Tbsp. whipping cream or milk
2 tsp. vanilla

Method:
Preheat oven to 325 F.

In medium bowl combine cookie crumbs, melted butter, and cinnamon. Press mixture onto bottom and side of 9- or 10-inch springform pan.

In large bowl, combine cream cheese, sour cream, melted chocolate, and sugar. Beat with electric mixer on medium to high speed until smooth.

Stir in eggsjust until combined. Stir in liqueur, whipping cream, and vanilla. Pour mixture into crust-lined pan.

Place springform pan in shallow baking pan. Bake for 50 to 60 minutes or until center appears nearly set when gently shaken.

Cool on wire rack for 5 minutes. Loosen crust cool for 30 minutes. Remove side of pan cool cheesecake. Cover and chill foi’ 6 to 24 hours.

Notes and Tips:
If you use a 10-inch springform pan, use 1 3/4 cups chocolate cookie crumbs and 7 tablespoons melted butter for the crust.
