Cream of Mushroom Soup

Cream of Mushroom Soup Recipe was a wonderfully quick and easy supper idea. I did this with a mix of mushroom types and added the sherry. It was so delicious that hubby ate 3 bowls of the stuff.it.

Serve: 4, Preparation time 32 minutes

Ingredients:
0.25 cupButter
0.25 cupfresh snipped parsley
1 cupheavy cream; warmed
1 poundfresh mushrooms; sliced
3 13-oz canschicken broth
4 tablespoonsFlour
dry sherry, or use more chicken broth
sherry (optional)

Method:
Wash mushrooms and chop coarsely.Heat the butter in a 3 quart saucepan. Saute the mushrooms about 5 minutes.

Sprinkle the flour over to coat. Add the broth gradually, stirring constantly. Add the parsley and sherry. Bring to a boil.

Remove from the heat and stir in the cream.

You may whirl in a blender at this point for a smoother texture, Some prefer just to leave as is.
