Ingredients:
1 500-gram pack penne pasta
2 tablespoons olive oil
1/4 kilo Italian sausage, sliced
1 cup sliced mushrooms
2 250-gram packs marinara sauce or pasta sauce of choice
salt and pepper, to taste
1 1/2 cups Mozzarella cheese
1/4 cup Parmesan cheese
Method:
Cook pasta according to package directions.
Drain and keep warm. Preheat oven to 400°F (200°C). Grease a 13- x 9-inch baking dish.
Heat oil in a skillet. Add sausages, stirring frequently, until sausages are cooked through.
Stir in mushrooms and simmer until mushrooms are tender. Pour in marinara sauce. Cook, stirring occasionally. Season with salt and pepper.
Add pasta to sauce mixture. Toss well to coat. Transfer to prepared baking dish.
Sprinkle top evenly with Mozzarella and Parmesan cheeses.
Bake for about 15 minutes or until cheese is bubbly. Let cool about 5 minutes before serving.
