Sweetened Rice with Nuts Yaksik

Sweetened Rice with Nuts Yaksik Recipe is that the preparation of it often involves the process of fermentation. Fermentation was frequently utilized by enlightened spiritual practitioners of ancient Korea to create food that would benefit all people.

Ingredients:
5 lbs glutinous rice
14 oz dried daechu (dates or jujubes)
14 oz peeled chestnuts
3 cups
dark brown sugar
1/3 cup soy sauce
3/4 cup sesame oil
1/2 cup pine nuts

Method:
Soak the rice in cold water for 4 hours. Drain and steam for 30 minutes.

Cut the daechu and chestnuts in half.

Place the rice in a large bowl. Add the brown sugar, soy sauce, sesame oil, daechu and chestnuts. Mix with a wooden paddle until the rice is evenly coated.

Put the entire mixture back into the steamer and steam for another hour.

Try one of the chestnuts to make sure they are cooked. If not, seam another 10 minutes or so before removing from the heat.

Put a layer of the sweet rice onto square or rectangular casseroles or other serving dishes.

Sprinkle with pine nuts. Repeat making sure to sprinkle pine nuts on top. Let cool enough to slice into squares. Serve warm or at room temperature.
