Ingredients:
175 g/6 oz/1 2/3 cup summer berries,
such as strawberries. blueberries, raspberries and flour pitted cherries
300 g/10 oz/2 cups self-raising flour
1 tsp baking powder
150 g/5 oz/ 2/3 cup caster sugar
100 ml/3 ½ 11 oz/scant ½ cup plain yogurt
125 ml/4 11 oz/½cup milk
1 egg. lightly beaten
1 tsp vanilla essence
125 g/ 4 1/2 oz butter. melted
For the frosting:
150 g/5 oz cream cheese
50 g/1 3/4 oz 1/3 cup Icing sugar
2 tsp lemon juice
fresh summer berries, to decorate
Method:
Preheat the oven to 200°C/400°F/Gas 6. Line a 12-hole muffin pan with paper cases. Cut larger berries, such as strawberries. Into blueberry-sized pieces.
Combine the flour, baking powder and caster sugar and sift together Into a large bowl. then scatter about three-quarters of the berries on top.
In a separate bowl or jug. stir together the yogurt. milk, egg. vanilla and butter, then pour into the dry Ingredients and stir roughly until just combined. Spoon dollops of the mixture Into the muffin cases and sprinkle the remaining berries on top. pressing down slightly.
Bake for about 20 minutes until risen and golden. Leave to cool in the pan for a few minutes. then transièr to a wire rack to cool completely.
To decorate, beat together the cream cheese, Icing sugar and lemon juice and swirl on top of the muffins, then top with fresh berries.
