Ingredients:
300 g/10 oz/2 cups self-raising
flour
1 sp baking povder
150 g/5 oz’2 cup caster sugar
100 3 ½ oz redeurrants. plus extra to decorate
225 ml/8 fl oz/scant 1 cup milk
1 egg. beaten
85 g/3 oz butter. melted
1 tsp vanilla essence

For the filling:
150 g/5 oz cream cheese
150 g/5 oz/ 2/3 cup caster sugar
1 egg. beaten
1/4 tsp vanilla essence

Method:
Preheat the oven to 200°C/400°F/Gas 6. Line a 12-hole heart-shaped muffin pan with heart-shaped papers.

First make the filling. Beat together the cream cheese and sugar until cream, then beat in the egg and vanilla until
smooth and creamy. Set aside.

To make the muffins, combine the hour. baking powder and sugar and sift together into a large bowl. Strip the currants from their stems and add the fruit to the flour. In a separate bowl or jug. combine the milk. egg. butter and vanilla. then pour over the dry ingredients.

Gently stir together until just combined, then spoon big dollops of the mixture into the paper cases. Top each one with a dollop of the cream cheese mixture. swirling ¡tinto the muffin mixture.

Bake for about 20 minutes until risen and golden. Leave to cool In the pan for a few minutes. then transfer to a wire rack to cool.

To serve, top each muffin with a sprig of redcurrants.
