Pumpkin Porridge Hobakjuk

Pumpkin Porridge Hobakjuk Recipe is that the preparation of it often involves the process of fermentation. Fermentation was frequently utilized by enlightened spiritual practitioners of ancient Korea to create food that would benefit all people.

Ingredients:
1 lbs sweet Korean pumpkin
4 cups glutinous rice flour
salt
water

Method:
Wash the pumpkin and cut it into 4 pieces. Remove the seeds and place into a large pot, skins facing up.

Add water to cover the pumpkin pieces and bring to a boil. Boil for about 25 to 30 minutes, until pumpkin is soft.

Remove the pumpkin and let it cool. Scrape out the insides of the pumpkin with a wooden spoon or spatula.

Place the pumpkin back into the pot; add the rice flour and about 10 cups water.

Continue to cook over medium heat. Add salt as needed and continue cooking, stirring continuously to keep the porridge from sticking to the bottom of the pot.

Cook for about 30 minutes, and then turn off the heat and cover, letting it steam for another 10 minutes or so. Serve warm or at room temperature.
