Christmas Eve Meatballs

Christmas Eve Meatballs Recipe My family refers to this recipe as Christmas Eve Meatballs because it’s the only time I make them. It can’t be skipped—they are popular. From Betty Fortschneider, Brussels, Illinois

Ingredients:
meatballs
3 pounds ground beef
3⁄4 cup dried bread crumbs
One 1-ounce package dried onion soup
mix
3 eggs, beaten
1⁄2 teaspoon garlic powder
1⁄2 teaspoon salt
1⁄2 teaspoon black pepper

For sauce
One 15- ounce jar grape jelly
One 24- ounce bottle ketchup
One 14- ounce jar pizza sauce
3 tablespoons lemon juice

Method:
1. Preheat the oven to 350°F.

2. To prepare the meatballs, combine all of the ingredients in a large bowl; mix well. Form the mixture into 64 meatballs.

3. Line two large baking sheets with foil and spray with nonstick cooking spray. Arrange 32 meatballs on each baking sheet.

4. Bake for 25 to 30 minutes until the meatballs are no longer pink in the center, stirring occasionally.

5. To prepare the sauce, combine all of the ingredients in a Dutch oven. Add the cooked meatballs and bring to a simmer over medium heat.

6. Simmer, uncovered, for 10 minutes, stirring frequently. Remove from the heat and let stand for 30 minutes.

Notes and Tips:
For a sweeter heat, add the grated zest of 1 medium orange and 1⁄4 to 1⁄2 teaspoon dried red pepper flakes to the sauce.
