Sinigang na Isda sa Calamansi

Ingredients:
Serves 6
rock salt
20 calamansi, divided in half
2 tablespoons cooking oil
1 onion, sliced
3—4 cloves garlic, crushed
4 tomatoes, sliced
4 cups water
2 radish, cut into 1/2-inch thick rounds
5 sitaw, cut 3-inches long
2 sigadilas, halved and sliced 3-inches long
2 eggplants, halved and sliced 3-inches long
1 bunch kangkong, each stalk cut into 4

Method:
Wash the fish. Rub ith salt Slice 10 of the calamansi and extract the juice.

Marinate the fish in the juice. Set aside.

In a large non-aluminum casserole or stockpot, heat oil and sauté onions, garlic, and tomatoes. Dour in water and add the
radish, sitaw and sigadillas.

Simmer until almost tender then add eggplants. When vegetables are almost cooked, add the marinated fish and return to simmer until fish is cooked.

Add kangkong and simmer about 1 minute.

Extract the juice of the remaining 10 calamansi and stir into the cooked fish. Remove from heat. Serve hot.
