Ingredients:
Serves 6
1/2 kilo beef tenderloin, or pork tenderloin, pre-sliced
into 1-inch cubes
1 teaspoon salt, for tenderloin
1/2 teaspoon paprika, for tenderloin
1/2 teaspoon ground pepper
1/4 cup vegetable oil
1 tablespoon minced garlic
1/2 cup chopped onions
1 cup sliced red bell pepper
1 425-gram can sliced mushrooms, drained, liquid
reserved
water, for adding to reserved mushroom liquid
2 cups 1-inch potato cubes
1 250-mililiter pack all-purpose cream (about 1 cup)
1 420-gram can whole corn kernels, drained
1/2 bar of a 200-gram pack cheese, freshly grated
1/4 teaspoon paprika, for sprinkling
Method:
In a wide bowl, season tenderloin with 1 teaspoon of the salt, 1/2 teaspoon each of paprika and pepper. Leave to marinate while you chop the vegetables.
In a large frying pan, heat vegetable oil over high heat until it just begins to smoke. Sauté meat in two or three batches
until lightly browned, Remove from an and set aside.
Using the same pan, sauté garlic, onions and bell peppers for 2 minutes.
Add mushrooms and cook for 1 more minute. Add enough water to reserved mushroom liquid to make 1 1/4 cups.
Stir in potatoes. Let simmer, covered, until potatoes are tender, about 8 minutes.
Uncover pan and add cream. Cook for about 2 minutes or until sauce thickens. Fold in corn kernels and sautéed meat.
Season with remaining salt. Transfer to a serving dish.
Sprinkle grated cheese and remaining paprika on top. Serve hot.
