Ingredients:
Serves 4
1 pata (front pork leg)
10 calamansi
ground black pepper
1/2 cup + 2 tablespoons brown sugar
1 cup pineapple juice from drained can of pineapple
chunks, (reserve pineapple)
1/2 cup liquid seasoning
2 pork-flavored bouillon cubes
4 cups water
10 laurel leaves
10 leaves Baguio pechay, optional
Method:
Marinate pork leg n ca/amansE, pepper, sugar, pineappie juice and liquid seasoning overnigh: or at least 1 hour.
Transfer pata and marinade to a stcckpot. Add pork cubes, water and laurel leaves.
Brirg to a boil then lower heat to simmer. Simmer for 2 hours or until pork is tender, turning pork occasionally for even cooking.
Add pineapple chunks and bring to a quick boil. If desired add Baguio pechay and heat through.
