Paper-Wrapped Fish

Ingredients:
Serves 6
1/2 kilo fish fillet, cut into 1x1/4-inch cubes
salt, to taste
2 tablespoons white wine
rice paper*
2 tablespoons green onion, sliced 1 1/2-inches
long
2 tablespoons shredded ginger
vegetable oil, for deep-frying
extra green onion, for garnishing, optional
sweet and sour sauce, for serving, optional

Method:
In a bowl combine fish filet, salt, and wine. Marinate fish for about 15 to 30 minutes.

Arrange a piece of fish llet on each rice paper. Top with green onions and ginger.

Fold wrapper into envelopes, tucking ¡n the flaps to secure the fish.

In a deep frying pan, heat oil and fry wrapped fish until golden in color, about 4 to 5 minutes. Drain on paper towels.

Transfer to a serving platter. Garnish Mth green onions, if desired, and serve warm with sweet and sour sauce.

Rice paper is similar to tte ones used for Wetnamese spring rolls. Available ¡n specialty stores and ¡n large supermarkets.
