Pan-Seared Steak with Shallot Sauce

Serves 6
For the sauce
1/2 cup soy sauce
1/2 cup rice vinegar
3 cloves garlic, thinly sliced
2 shallots, thinly sliced
1 tablespoon honey
1/2 tablespoon black peppercorns
For the steak
2 tablespoons fresh lemon juice
1/2 cup butter, divided in half
1 teaspoon freshly ground pepper
2 cups assorted mushrooms, drained
1 tablespoon minced ginger
2 tablespoons chopped green onions
6 T-bone steaks, cut 1/2-inch thick
salt and pepper, to taste
1/4 teaspoon pepper, divided
2 tablespoons corn oil

Method:
Prepare the sauce
The night before, combine say sauce, rice vinegar, garlic, shallots, honey and peppercorns h a saucepan. Simmer
over medium heat about 15 minutes.

Remove from heat and let coot Strain sauce into a container with cover and refrigerate overnight.

Prepare the steaks
In a saucepan, combine the prepared sauce with the lemon juice, 1/4 cup of the butter and ground pepper. Simmer over medium heat about 2 minutes.

Remove from heat and keep warm.

In a skillet melt remaining butter. A1d mushrooms and ginger, and cook, stirring occasionally, until the mushrooms
are tender, about 10 minutes. Remove from heat and add green onions. Season with salt and pepper. Set aside.

Season steaks with salt and pepper. In a skillet or sauté pan, heat oil and cook the seasoÆd steaks about 2 minutes each side.

Spoon prepared sauce onto a ser%’ing dish.

Arrange steaks on sauce and top with mushroom mixture. Serve warm.
