Pan-Roasted Ocean Scallops with Bacon, Calamansi and Sake

Ingredients:
Serves 1
4 pieces scallops
salt and pepper, to taste
1 tablespoon calamansi juice
1 tablespoon sake
1 teaspoon unsalted butter
1 slice bacon
assorted sautéed green vegetables, optional

Method:
Heat pan and add oil. Season scalbps with salt and pepper.

Sear scallops in oil evenly on both sides, about 5 to 7 minutes.

Remove scallops from pan and deglaze pan with calamansi juice and sake. Finish saice by adding butter.

Meantime, place bacon in another pan. Heat pan and cook bacon until its fat is rendered and bacon turns crisp but not too brown. Break into bits and set aside.

Pour calamansi-sake sauce over scallops. If desired, serve scallops over sautéed greens.

Sprinkle bacon over the scallops.
