Ingredients:
Serves 4 to 6
For the marinade
1/4 cup soy sauce
1 teaspoon ginger juice
2 teaspoons lemon juice
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon sugar
1 tablespoon cooking oil
For the milkfish stuffing
1 large milkfish, scaled, deboned and
butterf I led
5 medium onions, diced
5 tomatoes, chopped
2 tablespoons chopped green onions
To cook
1 cup cooking oil, for frying fish
Method:
Combine marinade ingredients and marinate the flsh for 10 minutes
Drain fish and reserve marinade. Stuff the milksh with onions and tomatoes, Reserve the green onions for topping. Fold the
fish to form it to its originai shape.
In a large wok or skillet, heat oil and fry fish until golden brown. Set aside.
Remove oil from skillet, leaving only one tablespoon.
Pour the reserved marirade in the skillet and boil for 1 minute.
Cut the fish into medallions. Pour sauce into a serving dish and add Wi medallions. Top fish with chopped green onions.
