Korean Style Sweet Chili Pork

Ingredients:
Serves 6 to 8
3/4 kilo pork tenderloin, sliced into stnps
1/4 cup soy sauce, for pork
3 tablespoons brown sugar
1/4 teaspoon ground pepper
3 tablespoons vegetable oil, for pan-frying
1/3 cup vegetable oil, for sautéing
1/4 cup chopped garlic
1 cup chopped white onions
1 cup chopped onion leeks
1 cup chopped ripe tomatoes
3 - 4 tablespoons Korean hot pepper paste
1/4 cup honey
1/4 cup soy sauce

Method:
In a bowl, season pork strips witri 1/4 cup or trie soy sauce, sugar and ground pepper.

Place 3 tablespoons oil in a wide non stick pan. Heat oil on high. Pan-fry pork strips in two batches, about 4 minutes each batch, turning after 2 minutes until pork strips are lightly browned.  Set aside.

In a big wok, heat remaining 1/3 cup oil to high. Add garlic, onions, and leeks and sauté for about 4 minutes, until
onioners are softened. Add tomatoes and pepper paste.

Cook for 1 minute, then add honey and remaining soy sauœ, stirring for 2 more minutes.

Add pork strips and cook for another 3 minutes until sauce coats pork strips.

Transfer to a serving dish. Serve with rice.
