Ingredients:
Serves 6
1 tablespoon olive oil, for sauteing
2 shallots, chopped
1 tablespoon chopped garlic
1 kilo tomatoes, diced
1/2 cup chopped lemongrass, white and light green
portions only
1 teaspoon salt
1/2 teaspoon pepper
6 blue marlin steaks, cut 1-inch thick, or
any firm-fleshed fish
2 tablespoons olive oil, for fish
Method:
In a saucepan, heat 1 tablespoon of the oil and sauté shallots and garlic, stirring until softened, about 3 minutes.
Add tomatoes, lemongrass, salt and pepper.
Bring to a boil, lower heat, and simmer, stirring occasionally, until tomatoes soften and fall apart, about 20 minutes.
In a bowl, pass tomato mixture through a sieve. Discard all solids and season liquid th salt and pepper. Set aside.
Preheat griller.
Brush both sides of fish with remaining oil.
Season with salt and pepper. Grill fh, turning once, until just cooked, about 7 to 8 minutes.
Serve fish with the lemongrass tomato sauce.
