Toffee Sundae

Toffee Sundae is the best ever, and keeps for months in the fridge. It’s especially delicious for drizzling over ice cream. Toffee Sundae recipe makes quite a lot, but since it keeps for so long it’s great to have some just waiting for an excuse to be used up.

Ingredients 
FOR THE TOFFEE SAUCE:
8 tbsp (1 stick) butter
3/4 c (6 oz) light brown sugar
1/2 c (4 oz) superfine sugar
1 1/4 c corn syrup
1 c light cream
1/2 tsp vanilla extract

FOR THE SUNDAE:
1 tub vanilla ice cream

Method
For the toffee sauce, put all the ingredients into a saucepan, and boil for about 4–5 minutes, until the sauce is smooth, stirring regularly.

Place a scoop or two of vanilla ice cream in each bowl or glass. Drizzle over the warm toffee sauce.
