Paul’s Pumpkin Bars Recipe from Lisa Williams. Holiday Dessert bake-off Christmas Special recipe, is originally came from Better Homes and Gardens in 1997.
Ingredients
2 cups all purpose flour
2 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. ground ginger
½ tsp. ground cloves
1/8 tsp. fresh ground nutmeg
1 tsp. baking soda
¼ tsp. baking soda
¼ tsp. salt
4 eggs
1 15 oz. can pumpkin (not pie filling)
1-1/2 cups sugar
1 cup canola oil (or ½ oil + ½ applesauce)
Method
Preheat oven to 350 degrees.
Line 15” x 10” 1” pan with parchment paper so it extends up the sides. In a medium bowl stir together flour and next 7 ingredients; set aside.
In a large mixing bowl, beat eggs, pumpkin, sugar, oil and applesauce (if using).
Add the flour mixture and beat until well combined.
Spread into pan and bake for 25-30 minutes or until toothpick inserted in center comes out clean.
Cool on wire rack. Flip over and peel off parchment.
Frost with cream cheese frosting, and sprinkle with chopped pecans, if desired.
