Thai Ginger Chicken

Thai Ginger Chicken is a chicken dish can also be cooked for 10-15 minutes over a hot barbecue.

Serves: 4 
Preparation Time: 15 mins, plus marinating
Cooking Time: I 5-20 mins

Ingredients 
part-boned chicken breasts 4
fresh root ginger or galangal 5 cm
(2 inches), finely chopped
garlic cloves 4, crushed
red chile I large, finely chopped
shallots 1. finely chopped
finely chopped cilantro 2 tablespoons
thick coconut milk 150 ml (1/2 cup)
salt and pepper

To serve:
dipping sauce
rice
lime wedges

Method 
Rub the chicken with saft and pepper and place in a shallow container.

Mix the ginger, garlic, red chile, shallots and cilantro to a paste in a food processor. Mix in the coconut milk

Pour the marinade over the chicken, cover and leave overnight in the refrigerator.

Cook the chicken under a preheated broiler for 15—20 minutes or until done, turning and basting regularly with the remaining marinade.

Leave the chicken to stand for 5 minutes then slice. Serve with a dipping sauce. rice and lime wedges.
