Ham with Cherry Sauce

Ham with Cherry Sauce we made Cherry Sauce today and it was a hit. I am not a fan of raisins and was trying to get away from the raisin sauce. is was a huge improvement and everyone was happy. It was like a little bit of dessert in the main course.

Ingredients 
Ham
Ham steak (about 11/2 pounds)
Whole cloves
Fresh parsley sprigs
(optional)

Cherry Sauce
1 can (14½ ounces)
pitted tart red
cherries in water, undrained
½ cup unsweetened
pineapple juice
2 teaspoons lemon juice
/2 cup cornstarch
½ cup measure-for measure sugar
substitute
Red food coloring
(optional)
Parsley sprigs
(optional)

Method 
1. For ham, preheat oven to 325°F. Place ham in roasting pan. Stud surface of ham with cloves. 

2. Roast in oven 1 hour or until meat thermometer inserted in center of ham registers 160°F.

3. While ham cooks, make Cherry Sauce. Drain cherries, reserving 1 cup juice in glass Add enough pineapple juice to make 1 cup juice total. 

4. Combine juice mixture and lemon juice in medium saucepan. Whisk ¡n cornstarch until smooth

5. Heat mixture until boiling, whisking onstantly. Stir in cherries. Cook over medium heat 2 minutes or until heated through. 

6. Stir in sugar substitute and, if desired, food coloring.

7. Slice ham. Dnzzte cherry sauce over top or serve in bowl to pass at table. Garnish with parsley sprigs if desired.
