Deviled Chicken Dijon mustard, the vital ingredient in a devil sauce, is made from mustard seeds, salt, spices and white wine or wine vinegar.

Ingredients
boneless, skinless chicken thighs 8
dressed salad greens to serve
Devil sauce:
Dijon mustard 2 tablespoons
Tabasco 6 drops
garlic cloves 2, crushed
soy sauce I tablespoon
Method
Heat a grill pan. Open out the chicken thighs and remove any fat.
Make the devil sauce. Mix the Dijon mustard, Tabasco, garlic and soy sauce. Dip the chicken thighs into the sauce and coat well.
Place the chicken pieces flat on the grill pan and cook, in batches, for 8—10 minutes on each side.
Serve hot or cold with dressed salad greens.
