Ingredients 

3/4 cup of shortening

3/4 cup of light brown sugar

1 egg

1 3/4 cups of flour

1 teaspoons of baking soda

1/2 teaspoon of salt

1/2 teaspoon of vanilla extract

3/4 cup of shredded coconut

2 teaspoons of cream of tartar

Any flavor jam or jelly

Method 

Cream shortening and sugar together. Add egg and mix wel . 

Sift dry ingredients together and add. Add vanilla, and drop by teaspoons-full onto ungreased cookie sheet.

With your finger or a spoon, make an indentation in the center of the cookie ball and fil with jam or jel y. 

Sprinkle coconut over all and bake at 375F for 10-12 min.
