Chicken with Cashew Nuts burnt chili paste (nom prik pow) is a classic Thai spice paste.You can buy it ready made from Asian supermarkets.

Ingredients
peanut oil 3 tablespoons
garlic cloves 2, thinly sliced
boneless, skinless chicken breasts 4, cubed
dried red chiles 2—3, finely chopped
burnt chili paste 2 tablespoons
Thai fish sauce 2 tablespoons
water 2 tablespoons
sugar 2 teaspoons
fresh red chile I, sliced
holy or sweet basil leaves 10
kaffir lime leaves 4, shredded
roasted cashew nuts 125 g (1/2 cup)
To garnish:
fresh red chile I, sliced
basil sprigs
Method
Heat the oil in a hot wok and fry the garlic for 1 minute then add the chicken and stir-fry quickly until browned.
Add the dried chiles, chili paste. fish sauce, water, sugar and chile and stir-fry over a high heat for 2 minutes.
Add the basil leaves, lime leaves and cashew nuts and stir-fry for I minute.
Serve garnished with sliced red chile and basil sprigs.
