Apple Pecan Spice Squares is a recipe was tested with sucra-lose based sugar substitute.
Ingredients
1 package (18.2 ounces)
spice or carrot cake mix
3 large eggs
1 1/4 cups water, divided
1/2 cup plain fat-free yogurt
1/2 cup pecan pieces
tablespoon lemon
juice, optional
1 tart apple (such as
Granny Smith)
unpeeled, halved, cored and sliced
1 baking apple (such as Red Delicious)
unpeeled, halved, cored and sliced
1 ripe pear, unpeeled,
halved, cored and sliced
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/a teaspoon vanilla, butter and nut flavoring
1 tablespoon margarine, trans-fat free
1 tablespoon sugar

Method
1. Preheat oven to 350°F.
2. Combine cake mix, eggs, 1 cup water and yogurt in a medium mixing bowl. Beat according to package directions.
3. Coat a jelly roll pan with nonstick cooking spray. Pour batter into pan and smooth evenly with rubber spatula. Bake 20 minutes or until toothpick inserted into center comes out clean. Place on wire rack and cool.
4. Heat a 12-inch nonstick skillet over medium-high heat until hot. Add pecans and cook 2 minutes or until lightly browned, stirring frequently1 Remove to a plate. Set aside.
5. Return skillet to medium- high heat. Add /4 cup water, lemon juice, apples, pear, cinnamon and nutmeg. Bring to boil. Reduce heat to medium and continue cooking 3 minutes or until tender crisp. Remove from heat.
6. Gently stir in remaining ingredients plus pecans using a rubber spatula. Spoon evenly over cooled cake. Cut into 24 squares. Makes 24 servings
