Ingredients
1 cup vanilla soymilk
¼ cup cornstarch
2 cups hulled fresh or unthawed
frozen strawberries
¾ cup silken tofu, well drained
½ cup granulated sugar
2 teaspoons lime juice
1 teaspoon vanilla extract
Method
Combine the soymilk and cornstarch in a medium saucepan.
Cook on medium heat, whisking constantly, for 2 to 4 minutes, until the mixture starts to thicken. Take care that there are no lumps.
Do not let the mixture come to a boil. Transfer to a food processor or blender and add all the remaining ingredients. Process for 1 minute, stopping to scrape down the sides of the container as needed, until the mixture is completely smooth.
Pour evenly into six 6-ounce ramekins. Cover tightly with plastic wrap and refrigerate for 4 to 8 hours before serving.
Store leftover mousse tightly covered in the refrigerator.
